Cinnamon Sugar Cookies
Makes about 20 cookies
Ingredients:
- 1 cup butter, softened
- 1 cup sugar
- 1 egg
- 2 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ¼ tsp salt
- ¼ cup sugar (for rolling)
- 1 tsp ground cinnamon (for rolling)
Instructions:
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dough: In a bowl, beat the butter and 1 cup of sugar until creamy. Add the egg and vanilla extract, then beat until smooth.
Add dry ingredients: In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing until combined.
Form cookies: In a small bowl, mix ¼ cup sugar with 1 tsp cinnamon. Roll the dough into 1-inch balls, then roll them in the cinnamon-sugar mixture.
Bake: Place the balls on the baking sheet about 2 inches apart. Bake for 8-10 minutes, or until the edges are golden.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
