Cinnamon Sugar Cookies

 

Makes about 20 cookies

Ingredients:

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ¼ cup sugar (for rolling)
  • 1 tsp ground cinnamon (for rolling)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix dough: In a bowl, beat the butter and 1 cup of sugar until creamy. Add the egg and vanilla extract, then beat until smooth.

  3. Add dry ingredients: In another bowl, combine the flour, baking soda, cinnamon, and salt. Gradually add this mixture to the wet ingredients, mixing until combined.

  4. Form cookies: In a small bowl, mix ¼ cup sugar with 1 tsp cinnamon. Roll the dough into 1-inch balls, then roll them in the cinnamon-sugar mixture.

  5. Bake: Place the balls on the baking sheet about 2 inches apart. Bake for 8-10 minutes, or until the edges are golden.

  6. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
